Author Biography

Christine McFadden is the author of 17 cookbooks and has been nominated for a range of international cookbook awards, including the Guild of Food Writers Food Book of the Year. In 2010 she set up a successful cookery school, The Dorset Foodie, where she regularly holds classes on pie and pastry making along with lessons on baking with gluten-free flours. As a qualified home economist, Christine has a fundamental understanding of the physics and chemistry of flour, dietetics and nutrition, making her perfectly placed to author this definitive work on flour. @TheDorsetFoodie
